Our Story

Decaf worth defending.

For too long, decaf was an apology on a menu — poorly sourced, harshly processed, and quietly embarrassing. Rebel Decaf was built to change that, for good.

Why we exist

Rebel Decaf started with a simple frustration — specialty coffee had made extraordinary leaps in sourcing, roasting, and brewing, yet decaf remained the menu afterthought. Commodity grade, chemically stripped, and tasted like it.

We believed that decaf drinkers — whether by choice or necessity — deserve the same craft and care as everyone else at the brew bar. So we built a roastery dedicated entirely to getting decaf right. Not as a side project. As the whole point.

Swiss Water Process — our non-negotiable

Every coffee we offer is decaffeinated using the Swiss Water® Process — the only method that removes caffeine without chemical solvents. Pure water and activated carbon filters strip caffeine while preserving the complex flavour compounds that make specialty coffee worth drinking.

The Swiss Water® certification on every one of our bags is a commitment to quality and transparency we take seriously. No exceptions.

Sourcing & selection

Our green coffees are sourced through trusted import partners with deep origin relationships. Every lot is specialty grade 80+, cupped and selected for flavour character — not just for being available as decaf. The result is a range that genuinely surprises people who come in expecting mediocrity.

Decaf coffee is only as good as the hands that serve it.

The best decaf in the world will taste average if it's preground, wrongly dosed, or poorly extracted. This page exists to make sure that never happens with Rebel Decaf.

The Problem

Preground decaf is the enemy of great decaf.

Most cafés serving bad decaf aren't using bad beans — they're using preground coffee sitting in a bag or a canister, dosed by eye, extracted with guesswork. The result is a flat, hollow cup that confirms every customer's worst suspicion about decaf.

Decaf loses its volatile aromatic compounds faster than caffeinated coffee once ground. The window from grind to extraction is short. Preground decaf left open on a bench for days is a lost cause before it hits the group head.

The fix is simple: grind fresh, weigh every dose, extract with precision.

Espresso Recipe

The Rebel Espresso Standard

A 1:1.8 ratio produces a slightly shorter, more concentrated shot — ideal for decaf which tends toward a rounder, fuller body. Works across our espresso blends and most single origins.

Why 1:1.8 for decaf?

Decaf extraction can run slightly faster due to the decaffeination process changing cell structure. A tighter ratio compensates — producing sweetness and body without bitterness.
